Introduction
Searched through my pantry to make a healthy dinner. Had a couple of tomatoes from my garden and an eggplant from the farmers market and voila, this recipe was born. Ingredients

8 oz Smart Taste Angel Hair Pasta
1 can diced tomatoes with oregano, garlic and basil
1 small eggplant peeled and diced
2 tomatoes chopped
1 clove garlic
1 Tbl olive oil
Directions
Boil water for pasta.
Saute garlic and eggplant in olive oil for 5 minutes
Add can of tomatoes and chopped tomato
Bring to boil and then lower temp, cover and let simmer
Add pasta to water and cook al dente
When cooked, place in large bowl and toss with sauce.
Serve with grated parmesan reggiano.
