Ingredients

    White Rice, long grain, 4 cup
    Peanut Butter, smooth style, 1 cup
    Red Ripe Tomatoes, 1 cup cherry tomatoes
    *Canola Oil, 1 cup
    Chicken Breast, no skin, 17.5 ounces

Directions

Heat up oil in a skillet
Add spiced cubed chicken to brown with spices to taste.
Add salt and pepper to taste.
Typically, I add minced garlic, ginger and bouillon cubes.
When chicken is brown, add blended tomatoes and let cook for about 5 to 10 minutes until the acidity is gone.
Add a cup of water water or low fat chicken stock
Add peanut butter and stir and let the stew simmer for a few more minutes to thicken.
Boil rice separately with half a teaspoon of salt to taste.

Serve rice with groundnut stew.
