Introduction

This is a low calorie very easy weeknight meal. If you don't have time to make fresh guacamole use diced avocado's, low fat sour cream or greek yogurt instead. Ingredients

    1.5 lb Boneless Skinless Chicken Thighs
    28oz can of diced Tomatoes
    12oz water
    1/2 cup Chicken Stock
    1/2 cup chopped red onion
    3 garlic cloves
    2 Tsp of Gulf of Mexico Spice Blend
    8 small corn tortilla's
    1 cup Shredded Cabbage
    Guacamole or Diced Avocado, lime wedges and cilantro for garnish

Directions

Sautee onion, garlic and spice blend in chicken stock over medium-high heat until tender and aromatic. Add chicken thighs and diced tomatoes, partially cover pan and reduce heat to medium. Cook chicken for 25 minutes or until done. Allow to cool for 5 minutes and warm tortillas in a non stick skillet. With 2 forks shred chicken. Assemble tacos with an 1/8 of chicken, 1-2 tablespoons guacamole or sour cream, cilantro and a bit of cabbage. Enjoy!
