A traditional southern spinich salad with a sweet bacon grease dressing. Majority of calories are in the dressing. Lower serving size or substitute lowfat/non fat ingredients as desired. Ingredients

    1/4 c. bacon grease
    1/4 c. Hellman's lite mayo
    1/4 c. vinager
    1/4 c. sugar
    5 c. fresh baby spinach
    5 T. sliced almonds
    10 fresh mushrooms, sliced
    1 lb. shrimp, cooked (grilled, broiled or boiled)
    5 pieces of cooked bacon

Directions

Preparing plates:
Arrange the following on each plate-
1 c. spinach
1 T. sliced almonds
2 sliced mushrooms
1 piece of bacon, crumbled

Dressing:
Mix first 4 ingredients in a small sauce pan. Cook on medium heat, stirring constantly, until clear. Take off heat.

Shrimp:
Cook shrimp as desired.

Add 3 oz of shrimp to each plate and drizzle with 3 T. of warm dressing. Serve.
