Introduction

Ingredients

    3.5 c. raw potatoes, diced
    1 medium stalk of celery, chopped
    1/4 cup raw onion, finely chopped
    4 tbsp. sweet pickle relish
    4 tbsp. mayonnaise
    2 tbsp. Marzetti lite slaw dressing
    1 tbsp. yellow mustard
    1/4 tsp. celery seed
    1/8 tsp. seasoned black pepper
    1/8 tsp. paprika



Directions

Cover potatoes with water. Bring to a boil. Reduce heat and simmer for 15-20 minutes or until potatoes mash easily with a fork. Drain and rinse potatoes. Mash potatoes coarsely. Stir in other ingredients one at a time, taste testing for flavor and adjusting accordingly. Save some paprika to sprinkle on top. Refrigerate for at least one hour; better if refrigerated overnight. Makes about 6 one-half cup servings.

Variation: add a chopped hard-boiled egg
