Introduction

I wanted to make a portable low carb breakfast and this worked well. I wanted to make a portable low carb breakfast and this worked well.

Ingredients

    Cooking spray
    3 tbsp butter
    1/2 medium onion, chopped
    1/2 small green pepper, chopped
    1 cup Jimmy Dean Turkey Crumbles
    6 eggs, scrambled
    6 tsp heavy whipping cream

Directions

Preheat oven to 375 degrees. Line muffin tin with muffin cups and spray with cooking spray. Melt butter in frying pan over medium heat. Add onion, pepper and sausage crumbles until onions are translucent and the sausage is brown.

Spoon sausage mixture equally into muffin cups. Pour egg mixture into muffin cups and sprinkle shredded cheese over each muffin. Bake for 20 minutes or until tops and golden brown. Let cool 5 minutes and enjoy.

Net carbs=1.5.
