Ingredients

Brown Rice Vermicelli, 250 grams
Nutrimax Beef Soup Base, 3 tsp
Homemade Vegetable Stock, 6 cup
Water, tap, 3 cups
Olive Oil, Extra Virgin, 1/3 tbsp
Garlic, 2 clove minced
Ginger Root, 1 tsp grated
Cinnamon, ground, .25 tsp
Coriander seed ground, 1 tsp
Soy sauce to taste
Firm Tofu, 1 package, cubed
Edamame, shelled, fresh, 1 cup
Bok Choy, raw-shredded, 2 cup
Toppings
2 plum tomatoes, chopped
Limes, 2 fruit, sliced in wedges
Cilantro, raw, 6 tbsp chopped
Basil, 6 tbsp chopped
Onions, raw, 6 tbsp chopped
Pea Shoots, raw, 2 oz
Directions
Cook vermicelli in boiling water. Stir until broken apart, drain and rinse in cold water.
Saute garlic in olive oil, add ginger and then add stock. Add ground coriander and cinnamon. Add soy sauce to taste.
Put tofu and bok choy into broth to warm up. Add rice noodles back into broth and heat through. Serve in bowls and add toppings.
Serving Size: Makes 6 large bowls of soup
