Introduction

Lots of filling vegetables and pre-cooked turkey sausage crumbles (new from Jimmy Dean). Can also scramble a couple of eggs to bulk it up but be sure to add in the extra calories/fat. Ingredients

    Onions, diced
    Green Peppers, diced
    Potatoes, diced (small dice like the oniones and peppers)
    1/2 jar fire roasted red pepper
    1 medium yellow squash
    2 servings (2/3 c. each) turkey sausage
    chicken stock to saute instead of oil.
    Minced dried garlic (or fresh), salt and pepper to taste

Directions

Saute onions, green pepper and diced potatoes in chicken stock about 5 - 7 minutes. Add sausage and saute another 5-7 minutes. Add more stock as needed. Add diced red pepper and diced yellow squash and saute about 5 minutes or until squash is cooked but still firm. Serve as is or add a scrambled egg for a filling breakfast hash. Can also be served with a salad for a quick lunch. Freezes well in individual containers for a quick weekday breakfast.

Serving Size: Makes 4.5 servings of 1 cup each
