Ingredients

1 tablespoon olive oil
1 cup chopped onions
2 cups chicken broth
16 ounce fresh salmon filet
salt and pepper
1/2 cup panko bread crumbs
1 ounce blue cheese
1 ounce mozzarella cheese
Directions
Makes 4 4-ounce servings
In a large skillet add one tablespoon olive oil and 1 cup chopped onion. Saute on medium high heat until onions are transparent. Cut salmon into 4 servings and season with kosher salt and freshly ground black pepper. Place in skillet and add chicken stock. Cover and simmer until salmon is just cooked through (about 5 minutes, depending on thickness of filet). Meanwhile, toss together breadcrumbs, blue cheese and mozzarella cheese. (If you don't have panko bread crumbs, use dried regular crumbs) Remove filet from skillet and place on heated broiler pan. Top with bread crumb mixture and broil until crumbs bubble and become golden brown. Serve immediately with steamed vegetables and salad for a delicious dinner.
