Ingredients

1/2 cup whole wheat flour
1/2 cup all purpose flour
16 cinnamon graham cracker squares
1/4 teaspoon allspice
1 teaspoon cinnamon
3 teaspoons baking powder
2 tablespoons unsweetened cocoa powder
1/4 cup brown sugar
2 large eggs
1 1/2 cup buttermilk
1 1/4 cup 1% milk
1/4 cup unsalted butter
1 cup fluff
2 tablespoons boiling water
1 1/2 cup mini marshmallows
10 tablespoons chocolate chips
Directions
1. In a medium bowl, stir together the flour, graham cracker crumbs, baking powder, brown sugar, allspice, and cinnamon.
2. In a small bowl, beat the eggs with a fork and stir in the buttermilk, milk, and melted butter.
3. Stir the wet ingredients into the dry ingredients with a fork, mixing only until combined. There will be lumps in the batter. Do not overmix.
4. Heat a griddle or large frying pan over medium heat. Spray with cooking spray.
5. Fry the pancakes until bubbles form across the top and the edges look dry.
Marshmallow Sauce
Marshmallow Sauce
1 cup marshmallow Fluff
2 tablespoons boiling water
Stir Fluff and water together in a small bowl.
Drizzle over pancakes.
You can either add 1 tablespoon chocolate chips to each pancake, or sprinkle on top with the marshmallow sauce.
