Introduction

High in fiber, low in calories, full of veggies, and really good if you need something hearty to warm you up. High in fiber, low in calories, full of veggies, and really good if you need something hearty to warm you up.
Number of Servings: 10

Ingredients

    4-6 cups vegetable/ chicken/ beef broth
    1 cubed potato
    1 package (10 oz) frozen mixed vegetable
    1 can kidney or white beans
    2 cans diced tomato
    2 cups fresh spinach
    seasoning to taste (suggested bay leaf, garlic salt/season salt, Mrs. Dash)


Directions

Bring broth to simmer and add potato, simmer ~3 minutes.
Bring to rolling boil, then add frozen vegetables, wait to return to low boil ~5 minutes.
Add beans and tomato, let simmer for ~20 minutes.
Add spinach and seasonings last, let cook for ~5 minutes.

Serve french onion soup style:
Put soup into oven safe bowl, put one slice of bread on top, then a slice of swiss cheese on top of that. Put under broiler until bubbly and delicious, ~2-4 minutes.
