Introduction

A unique tasting fall harvest soup. A unique tasting fall harvest soup.
Number of Servings: 6

Ingredients

    1 (15 oz.) can pumpkin
    1-1/2 cup reduced sodium chicken broth
    1 cup lowfat milk (2%)
    1 tsp ground cumin
    2 bay leaves
    fresh sage & popcorn for garnish

Directions

Mix first 5 ingredients and bring to simmer over medium heat. Simmer for 10 minutes.
Season to taste with salt and pepper.
Garnish with popcorn, fresh sage snips and pumpkin seeds.

    Like the others I added onion, garlic and cinamon. Also added a touch of nutmeg. It was delicious. I liked the simplicity of the recipe. - 9/29/12

  • The recipe as written was rather tasteless. I sauted some peppers and onions. I used pumpkin pie spice spice, cumin, cinnamon, and nutmeg. Instead of sage and popcorn I used bay leaves while it was cooking and whole wheat crackers. I'd make it again I'm sure. - 2/15/12
