Introduction

Very hearty Lunch with almost equal amounts of carbs and protein Very hearty Lunch with almost equal amounts of carbs and protein
Number of Servings: 4

Ingredients

    .5 cup chopped sweet onion
    .5 cup orange bell pepper chopped
    1 zucchini chopped
    1 tsp coconut oil
    1 pound ground beef
    4 servings of quinoa (cooked)
    seasonings to taste (I used salt, black pepper, onion powder, and cilantro)

Directions

saute' chopped veggies in coconut oil
remove after cooking for about 10 minutes
brown ground beef in same skillet for about 15-20 minutes (until cooked through)
in a big bowl, mix cooked quinoa, cooked veggies, and browned beef
Add seasonings

Makes about 4 servings evenly distributed
