Introduction

Number of Servings: 4

Ingredients

    1/2 lb green beans, cut into 1-2" pieces & parboiled 3 min
    2 Tbsp oil
    3 Tbsp red curry paste (3 = volcanic, 2 = merely spicy)
    1/4 lb pork, cut into small strips
    1/3 c chicken broth
    2 Tbsp fish sauce
    1 Tbsp brown sugar, packed

Directions

Parboil green beans. Mix sauce (broth, fish sauce, sugar).
Heat oil on low, add curry paste, cook 3 minutes, stirring often. Increase heat, add pork, toss a minute. Add green beans & sauce, stir well & cook 3-4 minutes further. Serve with rice to quench the flames!

Serving Size: Makes 4 servings (1 oz pork, 1/2 c green beans)

    This is wonderfully moist, quick and tasty. I doubled the recipe with 1kg sliced beef rump instead of pork and added 6 shredded kaffir lime leaves with the beans to stir fry. Substituted beef stock for chicken stock and it was amazing. A great recipe I will cook again.
