Ingredients

Rolls:
1 tbsp quick rise yeast
1 cup warm milk
1/2 cup white sugar, divided
1/3 cup melted butter
1 tsp salt
2 eggs
4 cups of flour
Filling:
1 cup packed brown sugar
1-2 tbsp ground cinnamon (to taste)
1/3 cup softened butter
Icing:
1/3 cup softened butter
1 1/2 cups powdered sugar
1/4 cup softened cream cheese
1/2 tsp vanilla
1/8 tsp salt
Directions
In a large bowl, combine yeast, milk and 2 tbsp of the sugar. Let rest for 10 minutes until yeast is foamy.
To the yeast mixture, add the remaining white sugar, 1/3 cup melted butter, salt, 2 eggs. Stir. Gradually add flour. Around the 3rd cup, the dough should be able to be handled. Spread remaining flour (gradually) on the counter and knead it into the dough. Continue to knead for 6-8 minutes (or until dough is smooth and elastic). Place the dough in an bowl (sprayed with cooking spray) and roll to coat. Cover loosely with plastic wrap. Place in a oven warmed to 150 degrees then shut off (place a oven proof dish filled with water in the oven to promote rising). Let rise for 1 hour or until doubled in size.
Punch down dough. Roll into a rectangle - 21" x 16"
Now for the filling: spread 1/3 cup softened butter over dough, right to the edges. Sprinkle1 cup brown sugar over dough and again spread to the edges. Sprinkle with 1-2 tbsp cinnamon and ensure it gets right to the edges. Tightly roll and pinch ends. Using a sharp serated knife, cut into 16 equal pieces. Grease a 9x13 dish and place in rolls (leave some room - I find I can only place 11-12 rolls in the dish and I put the remaining 4 or 5 in a pie plate. Put rolls in the oven warmed to 150 degrees then shut off (again with dish of water). Let rise for 1/2 to 1 hour until rolls have risen (and are now touching).
Remove buns from oven and preheat oven to 375 degrees. Bake the buns for 20 minutes (the tops should be brown).
While the buns are baking, place the cream cheese and 1/3 cup softened butter in a deep narrow bowl. Add the vanilla and salt and cream some more. Gradually add icing sugar, 1/4 cup at a time. Continue to mix until sugar has dissolved.
Spoon the icing equally over the 16 baked rolls. I find it helps if you then place the rolls back into the turned-off oven for just a minute then spread the icing.
Enjoy one and give the rest to your neighbours or co-workers!
