Number of Servings: 4

Ingredients

    4 c cooked leftover rice
    2 Tbsp oil
    1 Tbsp garlic, chopped
    1/2 onion, diced
    1/2 lb shrimp
    2 Tbsp fish sauce
    1/2 tsp sugar
    1 can crushed pineapple with juice
    2 green onions, sliced thin

Directions

Break up cold rice into small pieces.
Heat up oil in wok, add garlic & onion, stir-fry a minute. Add shrimp, cook 2-3 minutes or until shrimp are cooked through. Add rice, fish sauce, sugar, pineapple & green onions, stir until heated through.

Serving Size: Makes 4 1c servings

    I have that cookbook, too--this is a nice change from the usual salty/oily fried rice. The whole family loved it, including two teenage boys. - 10/11/11
