Ingredients

    Refried Beans, 0.5 cup
    Shredded Cheddar Cheese Low Fat, 1.25 cup
    Fiber One Cereal, 0.5 cup
    Tortilla chips, low fat (baked), 8 chips
    Old El Paso Taco Seasoning, 1 tsp
    Chicken Breast, no skin, 3 small breasts (about 2 lbs)
    Salsa, 3 tbsp

Directions

Preheat oven to 350. Spray a baking pan with nonstick spray and set aside.

To make the filling, combine beans and shredded cheese - mix thoroughly and set aside.

In a blender or food processor, grind cereal, chips, and taco seasoning. Transfer to a plate and set aside. Lay chicken breasts on a clean, dry surface. Spoon filling onto the centers of the chicken breasts, evenly dividing it among them. Carefully roll each breast up over the filling and secure with toothpicks.

Cover each stuffed chicken breast with 1 tbsp salsa. Carefully roll each cutlet in the crumb mixture, making sure to coat all sides. Transfer to the baking pan.

Cover the pan with foil, and bake in the oven for 20 minutes. Remove foil, and bake in the oven for another 15 minutes or until chicken is cooked through and outsides are crispy.

Serve with sour cream and/or salsa, but be sure to add them into your tracker!

    Incredible!
    Very good! I left out the Fiber one cereal, but it turned out perfectly fine anyway. I also added about 1/4 tsp of cayenne to the tortilla chip crumbs. Will definitely make again. - 2/17/14

    We have made this multiple times; I love her books. I grind up a whole bag of the Fiber One cereal in my small blender so it's ready to go - you just use 1/2 the amount cuz it's already finely crushed.
