Introduction

Wonderful summer salad. Great to bring for pot luck. Wonderful summer salad. Great to bring for pot luck.

Ingredients

    2.5 c Edamame, frozen, prepared
    2 c corn, frozen, defrosted
    6 scallions, thinly sliced
    1 red pepper, chopped
    1 sm can black olives (2.5 oz)
    .25 c olive oil
    .25 cider vinegar
    1 tbsp parsley
    1 tbsp splenda (sugar equivalent)

Directions

Mix edamame, corn, scallions, pepper and olives in bowl. In small bowl, mix oil, vinegar, parsley and splenda and mix well. Pour over vegetables and chill for a few hours or overnight. Enjoy.
