This chowder just screams summer fresh flavor. The soup is so sweet since you are not cooking the corn. Even adding a pinch of cayenne doesn't diminish the sweetness, it just gives it a little kick.The almonds thicken the soup and make it extremely filling. Ingredients

1/4 cup whole raw almonds
2 large ears of raw corn
pinch cayenne pepper
sea salt to taste
1 1/2 cups of fresh water
Optional add ins:
pinch cumin
1/2 small garlic clove
green onions/scallions
fresh basil
fresh cilantro
Directions
* 240 mins (4 hrs) due to the soak time for the almonds
Take the 1/4 cup whole almonds and place in a bowl. Cover the almonds with one cup of water. Soak 4+ hours and then drain the water out.
Throw the soaked almonds in a blender and chop. Add a one and a half cups of fresh water, not the soak water chop the almonds even finer.
Take the kernels off the 2 ears of corn and add to blender. Add in your seasonings of choice. Blend well. Add more water if needed to desired consistency.
You garnish this soup with:
fresh basil or cilantro leaves
chopped red pepper
green onions/scallions
additional corn kernels
lime slice
