Ingredients

3egg whites
.5 cup unsweetened applesauce
.5 cup agave nectar or honey
.75 cups grated zucchini
.75 cups grated carrot
1.5 tsp vanilla extract
.25 c Simply Kraft reduced fat ricotta
1 cups whole wheat pastry flour
1/2 tsp baking soda
1 tsp baking powder
1 tbs cinnamon
1/4 tsp fresh grated nutmeg
2 scoops of EAS 100% whey protein (chocolate) or your favorite protein powder (watch label, may greatly change calories and carbs)
.5 cup chopped pecans (or walnuts)
4 tbs milled flax seed
1/2 cup oats
1/4 tsp salt (optional)
Directions
Mix first 6 ingredients together, mix the remaining (dry ingredients) together, fold all together bake in muffin pan or loaf pan sprayed with Pam bake until toothpick inserted comes out clean
if you want a great dessert, mix splena with marscapone or cream cheese and spread on top
makes 12 muffins
