Introduction

Fast and easy morning breakfast. Puffs up beautifully. Must be served immediately. Not truly vegan due to the eggs but Catergory didn't have breakfast listed. Fast and easy morning breakfast. Ingredients

    2 large eggs, slightly beaten
    1/2 c. Flour
    1/2 c. skim milk
    pinch of salt
    pinch of ground nutmeg
    1 T. Butter

Directions

Must have a skillet that can go from stove top to oven.

Preheat oven to 425 degrees.

Whisk eggs, flour, milk, salt, and nutmeg together. Batter may be slightly lumpy, can be done the night before and refridgerated. Set mixture aside.

Melt butter in skillet over medium heat. When butter is melted pour egg mixture into skillet. Place skillet into oven and bake for 12-14 minutes until puffy and golden.

Serve immediately! Pancake will deflate shortly after baking.

Optional toppings: fresh cut up fruit, maple syrup, powdered sugar, whip topping, mini chocolate chips, chopped nuts, etc. Toppings will alter nutritional info.
