Introduction

Set your bread machine on the dough setting. Use this recipe for breads, rolls, cinnamon bread and cinnamon rolls. It is very soft and yummy. They freeze very well. You can substitute honey for sugar, whole wheat flour and gluten for white flour. You may add 2 T of ground flax seed. Or braid the dough for a special occasion! Ingredients

    1 1/3 c water
    1 egg
    2 T cooking oil
    1/2 c instant potato flakes (not buds)
    20-21 oz whole wheat graham flour
    OR replace one oz of flour with 1 oz of wheat gluten to prevent it from being too heavy after baking.
    1 t salt
    2.5 t yeast

Directions

When the dough is finished I don't knead it just cut the dough in the number of pieces needed. I bake this in 3 small glass bread pans and bake 21 or 22 minutes. Cut them in 10 slices each. If you use 2 bread pans add minutes to baking time. Oil the pans lightly first. Remove from pans to a cooling rack immediately following taking them from the oven. This recipe makes 24 cinnamon rolls. I bake these in a pan the size of a jelly roll pan with taller sides.
