Ingredients

    1 box ready to serve mole
    1 lb chicken thigh fillets
    100 g Ranchero blend vegetables
    2 rice cup rice
    low sodium chicken base

Directions

Simmer chicken thighs in sauce until done. Shred with forks and mix with sauce. Prepare rice per rice cooker instructions adding chicken base and frozen vegetable mix. Serve chicken over rice
