Ingredients

    1 x 19 oz/540 ml can black beans, rinsed and drained
    1 x 19 oz/540 ml can red kidney beans, rinsed and drained
    1 x 19 oz/540 ml can chickpeas, rinsed and drained
    1 x 19 oz/540 ml can firm lentils, rinsed and drained
    1 bunch scallions, trimmed and chopped
    2 Roma tomatoes, coarsely chopped
    1/4 cup/60 ml chopped cilantro or parsley
    2 Tbsp/30 ml good-quality olive oil
    2 Tbsp/30 ml apple cider vinegar
    Juice of freshly squeezed lime

Directions

Mix all ingredients together and chill for at least 2 hours
