Introduction

I learned this recipe from my Dutch mother-in-law. She serves it with crispy French bread or, for special occasions, with a "dressed up" french bread with salami, pineapple slices and a piece of Gouda cheese melted over the top of each slice. Yum! Ingredients

    1 onion, chopped
    salt
    pepper
    2 tomato bullion cubes (look in the Mexican foods section)
    2 large cans of diced tomatoes
    3 sprigs of fresh parsley
    1 lb. lean ground beef
    vermicelli or angel hair pasta
    basil
    1 small can tomato puree

Directions

Mix ground beef with salt and pepper and roll into small meatballs. Set aside. Combine all other ingredients, EXCEPT PASTA and bring to a boil. Add 2 large tomato cans full of water (more, if desired). Add meatballs and simmer for 20-30 mins. Add thin pasta (broken into 2 inch sections) and allow to cook for 10 additional minutes.

Serve with crusty bread.

Serving Size: Makes a large Dutch oven full of hearty soup!
