Introduction

This looked really good, & I thought it would be a nice change from my regular chickpea salads... This looked really good, & I thought it would be a nice change from my regular chickpea salads...
Number of Servings: 6

Ingredients

    2 cups cooked couscous
    3/4 c roasted almonds chopped
    1 medium zucchini chopped & sauteed in olive oil
    3 scallions chopped
    1 can chickpeas rinsed ,drained
    3/4 c fresh peas
    3 tbs EVOO
    3 Tbs lemon juice
    parsely
    basil
    salt
    pepper

Directions

Cook couscous & bring to room temp, sautee chopped zucchini,
microwave peas in 1/4 c water for 2 minutes, drain & reserve pea liquid.
Add roasted chopped almonds to bowl of couscous, add chopped scallion, drained/rinsed chickpeas &other ingredients.
Mix pea liquid w lemon juice & extra virgin olive oil.
Salt pepper , basil parsley to taste.

Serving Size: This makes 6 one cup servings (packed)
