Ingredients

Turkey (light meat), 1 cup, chopped or diced
Olive Oil, 1 tbsp
Garlic, 6 cloves
Ginger Root, 4 tsp
*Bok Choy, raw-shreaded, 2 cup
Natural Chunky Peanut Butter, 2 tbsp
Salt, 2 tsp
Onions, raw, 2 small
Soy sauce (tamari soy is gluten free), 1 tbsp
Water, 1/2 cup
Directions
Saute bok choy and onions with turkey in olive oil. Add water and tamari to continue the cooking of these ingredients vs. adding more olive oil. (Note: Tamari sauce is preferred over soy sauce if you want to do a gluten-free version.) Cook to suit your taste, preferably lightly crispy vs. mushed. Add garlic and ginger. Stir in peanut butter until it is distributed evenly. Add freshly ground sea salt to taste.
Serve over organic brown rice, jasmine rice or white rice.
