Ingredients

    beets-3 roasted
    salad greens-3 cups
    feta cheese- 1 cup
    capers- 2 tbs. drained
    1/4c extra virgin olive oil
    fresh minced chives
    red onion-1/2 cup

Directions

cook at 350 for 1-2 hrs. Peel & slice. Place beets on plate, then cover beets with greens, add cheese, and make the dressing and pour over salad.

olive oil
chives
red onion
