Ingredients

    1 medium sweet potato, with skin on
    non-stick cooking spray
    salt & sugar substitute to taste

Directions

First, preheat the oven to 350 degrees. Cut off the ends of the sweet potato and place it on a plate. Next, microwave for approx. 2 minutes, so it's almost cooked through, but not mushy. Cut the sweet potato into strips and place on a cookie sheet that has been sprayed with cooking spray. Combine sugar substitute and salt to your liking and sprinkle about half over the sweet potato strips. After placing in the oven for 10 minutes or so, you may want to broil for a few minutes to make the "fries" extra crispy. Sprinkle the rest of the sugar/salt over the strips and enjoy!

    I peel and cut them (raw) like fries, toss with a bit of olive oil and bake 400. If you crank the heat to 450 and get them to really brown around the tips, they are incredible! No sugar needed. - 5/27/09

    I can't believe I had never tried a sweet potato! I microwaved for about 6 minutes then stuck under the broiler, didn't bake it. Tasted great! Now I have to look for more recipes with sweet potatoes! - 1/28/09

    I love this. I fixed it for dinner tonight. I don't add sugar, but other spices are good. It took 30 min. at 400 degrees for 2 sweet potatoes' fries. - 5/27/08
