Ingredients

    3-4 Chicken Breasts
    2 15-oz. cans black beans, undrained
    2 15-oz. cans Mexican stewed tomatoes
    1 cup salsa
    4-oz. can chopped green chilies
    14.5-oz. can tomato sauce

Directions

Spray crockpot with non-stick spray. Place chicken breasts in the bottom of the crock (can be frozen still). Add remaining ingredients on top. Cook for 8-9 hours on LOW or 4-5 hours on HIGH. Can sprinkle part skim mozarella cheese on top. Makes approximately 12 1-cup servings.

    Absolutely delicious, and SO EASY! I use 1 can black beans, and 1 can Kidney beans- cause my son LOVE those. With out without Mozz. cheese- and/or sour cream. Thick, delicious soup!! - 11/29/07

    So I was batting a thousand when I decided to make this. I had italian stewed tomatoes instead of mexican, and I had a can of mex. green chili and salsa verde. My husband said Qdoba had nothing on my tortilla soup so I would say even with the substitutes this was a SUCCESS! - 6/18/09

    I added a cup of frozen corn kernels and about 1/4 cup lime juice to it. I also added 1 cup Minute Brown Rice the last 30 minutes. It is SO good!! - 1/23/12

    Made this tonite and it's terrific. DH thought it was too thick, but he ate two bowls. It is thick, more like Rachel Ray's STOUP, part STew and part sOUP. I thought it was going to be thin, but it really thickened nicely at the end and was a very hearty meal. Served w/ lowfat corn bread. Yumm-o! - 3/29/09

    Excellent! Very enjoyable- sprinkled some cheese and a dab of sour cream and it was wonderful! I made it even healthier by using low fat cheese, organic beans and no salt added varieties of tomato and tomato sauce. Thanks for sharing! - 12/11/07

    I'm always on the lookout for a delicious, healthy, crock pot recipe and this one definitely fits the bill! I only did one can of tomatoes and I added corn and a few cups of chicken broth. I also omitted the green chiles. I topped it with plain yogurt and avocado! Delish! - 1/6/13

    Many complain because this has no tortilla chips in it....It is just an exact tortilla recipe, without the chips. You may add the chips if you like, but I am leaving the title so that other know what type of soup it is. - 9/17/12

    This is flexible, easy, and yummy! The whole family likes it. If I add extra beans (I change it up on the type), they use those scoop chips and eat it as a dip. Some times I add Rotel instead of the green chillies, and basically just use what ever type of tomato or beans I have in the cabinet. - 1/20/11

    I didn't make it in the crockpot but the recipe inspired me to use what I had on hand, a little leftover chicken, some turkey sausage and lots of tomatoes from the garden for salsa. Generally I stuck with the recipe plus spices, it was thick like chili or stew. - 7/3/13

    Without "tortilla" chips...this recipe is misnamed. Adding fried chips will increase calories drastically, so might just be easier to rename the recipe. Can't believe no one noticed this. :) - 11/5/11

    I made this today for the first time and loved it! I used the ingredients the recipe called for, but opted for low sodium tomato sauce. I used 3 frozen chicken breasts and slow cooked for about 4 & 1/2 hours. I added nothing but plain, non fat yogurt to my bowl. So easy and YUMMY! - 1/27/10

    WE really liked this a lot. It was too spicy for my daughter and a little too spicy for me. I think next time I will only put 2oz of the green chillies in and add brown rice. Other than that, hubby had seconds and I enjoyed it (it made me drink lots of water!) I will make this again for sure. - 1/27/10

    Not sure where the tortilla part comes in ... but this was TERRIFIC!!! I followed the recipe exactly except I added 1/2 cup barley for the last 3 hours. Thickened up very nicely - more like a chili than a soup. Everyone in my family loved it and it was super easy to make. - 6/19/09

    Sounds good, but a couple of questions.
    Do you shred the chicken or just cut it into bite sized pieces? Why the same cooking time for frozen & fresh chicken breasts - wouldn't the fresh chicken be over cooked?
