Ingredients
-
pizza dough
2 cups broccoli florets
4 tbsp goat cheese
1/3 cup olive oil
5 minced fresh garlic cloves
shredded queso fresco or mozarella
2 tbsp parmesan cheese
garlic salt (optional)
Directions
prepare pizza dough, make two long rectangular shapes. I laid each half out in a pre-oiled cookie sheet, so I had two rectangles in a same baking sheet, but you could use two separate half sheets.
Boil 4 cups of water, add salt and then broccoli flowerets. cook until tender (4-5 minutes). Drain.
In a small pan, heat 1/3 cup olive oil with the 6 minced cloves in medium-low heat. Cook garlic in oil for 2-3 minutes (shouldn't brown).
Grab 2/3 cooked broccoli and mix it in a food processor with 4 tbsp goat cheese and olive oil. Add salt and pepper to taste.
cover pizza dough with puree, then sprinkle over the queso fresco or mozarella and the parmesan.
Set in preheated oven at 450 for 20 minutes or until crust is golden brown.
Cut while it is warm, then sprinkle garlic salt if desired while you wait for it to cool.
Serving Size: makes 10 3 inch pieces
