Ingredients

    1/2 cup Old Fashioned Oats
    2 Tbsp Flax seed meal
    1/2 cup Fiber One Cereal (ground into crumb like texture)
    1/4 cup Whole Wheat Flour
    1/4 cup Splenda
    2 Tbsp Splenda Brown
    1/2 tsp Baking Powder
    1 tsp Cinnamon
    1 scoop Isopure or other zero carb protein powder
    1/2 cup unsweetened applesauce
    1/4 cup pumpkin puree
    1/4 cup egg substitute
    2 Tbsp Golden Raisins (chopped)
    2 Tbsp Craisins (chopped)
    2 Tbsps dried unsweetend Coconut flakes (chopped)
    1/4 cup walnuts (chopped)
    lemon zest

Directions

Preheat oven to 375 degrees F.

In a food processor grind Fiber One Cereal to crumb-like consistency. (I do a big batch and keep handy for recipes)

In a large bowl add oats, flax, flour, sweeteners, baking powder, cinnamon and protein powder. Set aside.

In a smaller bowl, combine all wet ingredients (applesauce, pumpkin puree, egg substitute) stirring until mixed well. Add wet mixture to large bowl of dry ingredients. Stir until completely blended.
Add Chopped raising, craisins, coconut, walnuts and lemon zest. Stir into batter until evenly distributed.

Spray a large baking sheet with nonstick spray. Using an ice cream scooper, scoop batter into 6 big mounds spaced evenly on the sheet. Using the botton of the scooper, lightly pat the tops of the mounds to flatten slightly.

Bake on middle rack of the oven for 10-12 minutes or until the tops of cookies are just slightly firm.
Allow to cool on the sheet. Can be eaten warm or cold.
Can be frozen and thawed as needed or warmed in a microwave.

1 big cookie = 1 serving
