Introduction
Delicious blueberry muffins that taste like a blueberry pancake! Delicious blueberry muffins that taste like a blueberry pancake!Number of Servings: 10
Ingredients

1/2 c. Low Fat Cottage Cheese
2 Eggs
1/3 c. 1% Milk
40 Drops of Liquid Stevia
3/4 c. Soy Flour
3/4 c. Oat Flour
1/2 tsp. salt
2 tsp. baking powder
2 tbsp. Fructose Powder (or substitute regular granulated sugar)
1 c. Frozen Blueberries, Thawed
Directions
1. Preheat oven to 325 degrees. Sift dry ingredients in a mixing bowl. Combine wet ingredients in a food processor or blender. Combine the two, careful not to over mix. Measure 1 c. Frozen Blueberries - put in microwave and defrost. Fold blueberries into batter. Fill 10 muffin cups (that have muffin liners).
2. Bake for 35 minutes in the pre-heated oven., or until done.
3. Makes 10 muffins. 1 muffin = 1 Zone blocks.
Note: You may want to let these cool before eating them as it's easier to get them out of the paper liners. I put the leftover muffins in the refrigerator. Also, you could add some brown sugar on the top for a little extra sweetness!
