3 C whole wheat flour
1/2 C rolled oats
1 C Splenda
4 Tbsp unsalted butter
2 tsp cinnamon
1 Tbsp baking powder
1 tsp baking soda
1/4 C unsweetened applesauce
2 C mashed bananas
3 large eggs
Directions
Mix flour, oats and Splenda together. Measure out 3/4 cup of dry mix. Add 1 tsp of the cinnamon and cut in the butter with a pastry blender. Set this aside to be the topping for the coffee cake. Add the baking powder, baking soda and the remainder of the cinnamon to the flour mixture. In a separate bowl, combine the applesauce, eggs and bananas. Fold this mixture into the flour mixture. Mix well and pour into a 13" x 9" x 2" pan that has been sprayed with nonstick spray. Sprinkle topping on it and bake at 375 degrees for 35 minutes or until toothpick inserted in the middle comes out clean.
