Introduction
I make this often as Spaghetti Bolognese or add more spice and kidney beans to make Chilli Con Carne or roll the mince as meat balls and cook them first then add the sauce, so one basic recipe can cover 3 decent family meals using storecupboard ingredients. Ingredients

1kg Lean Beef Mince
2 Large Onions (finely chopped)
2 cloves of garlic crushed
3 Medium carrots (grated)
250g Mushrooms (finely chopped)
Passata 500g
Chopped Tomates 400g
Black pepper to taste
Beef Oxo Cube
Mixed Dried herbs
(For Chilli Only)
Dried chilli flakes
Paprika
Chilli powder
Kidney Beans (one can) need to add calories to recipe
Directions
Chop all your vegetables to your required size, I usually chop quite small to disguise the veg for the kids.
For spaghetti or chilli dry fry the mince till brown and drain any excess fat then place into a colander filled with kitchen roll to absorb any fat left on the mince.
In another pan or remove any fat from the mince pan fry your onions on a low heat until soft and brown, add mince and sprinkle oxo cube and spices onto your mince, cook through for a good 5 minutes then add garlic and carrots and mushrooms.
Stir in passata until everything is covered finally add your chopped tomatoes and lots of black pepper to taste. If having chilli add your kidney beans and simmer for at least 30 minutes.
If having meatballs mash garlic and herbs into the mince and massage until all the ingredients are combined, then roll into as many balls you can make, you choose the size. Pop the meatballs onto a tray and cook in the oven on a medium heat for 20 minutes or until brown.
Meanwhile make the sauce as above once the sauce is prepared and bubbling add the meatballs and simmer for at least 20 minutes.
You could also prepare the tomato sauce as for the meatball recipe but then add frozen quorn mince to make a vegetarian bolognese or chilli. It really is a versatile family recipe and not too fatty, you could go extra lean and use pork or turkey mince and use vegetables to your taste, peppers work well I just don't like them.
Obviously you will need to adjust the nutrional values if you change things around and this is set up for spaghetti bolognese so if yo have chilli you will need to add the kidney beans to your list. Also I havent measured the spices as I simply chuck in what i have and it always turns out ok. We like it quite hot if you prefer mild I would omit the chilli flakes and paprika!!!!!
