Ingredients

    1 Tablespoon whole grain mustard
    1 clove crushed garlic
    juice of one lime or lemon
    4 tail pieces of Salmon (150-200g each)

    Salad
    100g baby spinach
    12 cherry tomatoes, halved
    1 cucumber, sliced
    1 avocado, sliced
    1/3 cup basil washed and roughly chopped
    1/2 red onion, finely sliced
    1/2 tablespoon olice oil
    1 tablespoon balsamic vinegar

Directions

Mix mustard, garlic and lime/lemon juice in a large bowl. Add salmon, turning to coat. Cover and chill while you make the salad. Place spinach, cucumber, tomatoes, avocado, basil and onion in a large salad bowl. Add oil and balsamic vinegar and gently toss.
Preheat grill or fry pan to hot. Cool salmon on plates, then top with salmon and serve immediately.
