Introduction

These are whole wheat, sweet blueberry muffins I created from a base recipe in Boston School of Cooking (1969), when they didn't think about not cooking with butter. It looks very little like the original, but I think it's much yummier as well as healthier. Ingredients

    1 cup whole wheat flour, preferably fine
    3/4 cup minus one table spoon white flour
    1 Tbsp oat bran
    1/4 cup sugar, white
    3 tsp baking powder
    1/2 tsp salt
    2 Tbsp applesauce, unsweetened
    1 Tbsp olive oil
    1 egg, lightly beaten
    1 tsp vanilla
    1 cup milk, 1 %
    1 cup fresh blueberries

Directions

Mix dry ingredients, except blueberries together. Then mix in the wet ingredients until just blended. Fold in the blueberries. Put in a muffin pan sprayed with cooking spray. Fill each cup about 2/3-3/4 full. Bake at 400* for 15 minutes. Let cool for a minute or two before removing from pan.
