Ingredients

1 C whole wheat flour
1/2 C Multigrain quaker oats
1/4 tsp salt
1/2 tsp baking soda
1/4 tsp baking powder
1 TBSP cinnamon
1/2 C packed brown sugar
1/2 C unsweetened applesauce
1/2 C egg beaters original ( slightly beaten)
2 ripe medium bananas
Directions
Preheat oven to 350 degrees
Spray loaf pan with nonstick spray of choice
In a medium bowl combine flour, oats, salt, baking soda, baking powder, and cinnamon.
In a mixing bowl combine brown sugar and applesauce. Mix with hand-held mixer until disolved. Add in eggs and mix in well. Mash bananas and add to mix - continue to beat together while slowly adding the dry mix.
Once combined place in - cook at 350 for 40-50 min or until a toothpick is able to be inserted and removed clean.
OPTIONAL:
Once removing it from the oven i sprayed the top of the loaf with spray butter and sprinkled with splenda to give it that sweet taste - who knew healthy could taste so good!!

I had to make a few substitutions as I was baking at a friends, no applesauce so sub non fat greek yogurt, no baking soda so upped the baking powder 2 tsp, only 1 tsp cinnamon a tbsp sounded like too much but next time I am going to stick the the original my version was good but think as is will pro - 2/13/12
