Ingredients

-10 ounces Penne Pasta
4 tbsp. Olive Oil
2 cup halved Teardrop Tomatoes
4 Scallions, sliced
1 cup Chicken Broth
Juice of One Lemon
Breast and Thigh (White) Meat from a Rotisserie Chicken
20-25 Fresh Basil Leaves
4 ounces Feta Cheese, cubed
Directions
Cook the pasta in boiling salted water until tender, about 10 minutes.
Drain, transfer to a large bowl and toss with olive oil, salt, pepper, tomatoes and scallions. Cover to keep warm until ready to serve.
Reserve the drippings from the rotisserie chicken and combine with broth and lemon juice. Shred or cut the chicken meat into bite size pieces.
Heat the broth and drippings in a large skillet. Add the chicken to warm the meat. Meanwhile, reheat the pasta in the microwave, then toss chicken, broth and basil with the pasta.
Divide among serving bowls. Top each one with Feta cheese, and garnish with a sprig of fresh basil. Makes 5-6 servings.
