Ingredients

    Filling:
    10 oz Swiss (or half Swiss and half Gruyere) Cheese
    2 tbsp flour
    2 large onions (white, yellow or red)
    4 tbsp butter
    2 large eggs
    3/4 cup soy milk (can substitute whole or low fat milk)

    Crust:
    6 tbsp butter softened
    1 cup whole wheat (or other flour)
    1/8 tsp salt

Directions

Grate cheese, toss with flour
Melt butter (4 T) in skillet, slice onions and saute them very gently in the butter until they begin to turn golden (about 30mins).
In the meantime make crust by mixing butter (6 T) whole wheat flour and salt. Pat into lightly buttered pie dish. Bake for 5 minutes in 350 degree oven.
Spread about 1/3 of cheese over crust, then spread the onions over it. Cover with remaining cheese. Beat the eggs with milk and pour over cheese.

Bake 35-40 minutes in 350 oven (or until top browns)
