Ingredients

    2 cups lentils
    2 carrots (1/2 cup)
    1 cup potato
    1 tsp olive oil
    1 tsp butter
    8 cupts water
    1 tsp salt
    black pepper to taste
    2 tsps cumin powder
    dash red pepper

Directions

1. Saute carrots in olive oil/butter
2. Add potatoes
3. Rinse lentils; add to pot
4. Add 8 cups water
5. Cook 30-60 minutes until done
6. Add spices (salt; black pepper; cummin; red pepper) to taste

Serving Size: Makes 8 1 cup servings
