Introduction

Ingredients

1 T olive oil
1-13oz package turkey or chicken italian sausage
2 cloves garlic, sliced thinly
2t chicken bullion, mix with 2 cups water (broth)
1-19oz can white beans, drained and rinsed
1-14.5oz can diced tomatoes, undrained
salt and pepper to taste
Directions
Makes 4 servings
Heat oli in large soup pot over medium heat. Remove sausages from casing; add to oil and cook, breaking sausage into bite sized pieces until browned. Add garlic and cook for 2 minutes more. Add beans, chicken bullion broth, and tomatoes with juice. Increase heat to medium-high and bring to a simmer. Simmer until beans are desired softened consistency, about 15 minutes.
Ladle stew into bowls, servie with a chunk of bread.
*Extra tasty and nutritious with the addition of kale or spinach a few minutes before beans are cooked through.
