Ingredients

    One-dish Mexican Dinner

    1 tablespoon oil
    1.5 pounds skinless, boneless chicken breasts-cubed
    1 medium onion
    5 cloves of garlic
    1 bell pepper (any color you have on hand)
    1 tablespoon cumin
    1 tablespoon Mexican seasoning
    1 pinch cayenne pepper
    1 15.5 ounce can of black beans rinsed and drained
    1 15.5 ounce can of corn, drained
    ½ bunch of cilantro
    2 cups cooked rice
    Shredded Cheese (Optional)
    Sour cream (optional)

    Place the oil in a large skillet and heat. Add the cubed chicken and brown. Add the onions and garlic. Cook for one more minute. Add all of the seasonings, black beans, corn, and rice. Cook until it is warmed throughout. Then add the cilantro. Cook for one more minute.

    When serving the One-Dish Mexican Dinner, place the serving on a plate and sprinkle your choice of shredded cheese and place a dalop of sour cream on top.
