Number of Servings: 6

Ingredients

    1 lb lean ground beef
    2 green bell peppers, cut into strips
    2 yellow bell peppers, cut into strips
    2 red bell peppers, cut into strips
    1 med onion, diced
    1 can kidney beans
    1 can diced tomatoes
    1.5 tsp chili powder
    2 tsp cumin
    1 tbsp oregano

Directions

Brown ground beef in skillet over medium heat. Drain excess fat. Add the bell peppers and onions. Continue cooking until pepper/onions are tender. Then add the kidney beans, tomatoes, and seasonings to the skillet. Salt and pepper to taste. Heat throughly and serve.

Substitutions: Ground turkey can be substituted for the ground beef to save calories.

Frozen multi-colored pepper (with onion) blends can be used instead of fresh peppers and onions to save prep time.
