Introduction

Number of Servings: 4

Ingredients

    For the glaze and pork:
    3/4 cup balsamic vinegar
    1/2 cup blackberry jam*
    1/8 cup grape jelly*
    1 tsp minced garlic
    1 tsp salt
4 center-cut pork chops (about 3/4 inch thick), trimmed of fat, about 5 oz each
salt & freshly ground pepper, to taste

Directions

To prepare the glaze, place the vinegar, jam, jelly, garlic, and salt in a saucepan and bring to a boil. Reduce for about 10 minutes, or until about 3/4 cup remains, then strain into a baking dish. Let cool and add the chops, turning to cover all sides with the marinade. Marinate in the refrigerator for 2 hours, turning once or twice.

Prepare the grill or preheat the broiler. Remove the chops from the marinade, reserving the marinade in a saucepan, and drain any excess liquid from the chops. Season the chops with salt & pepper, and grill over direct medium-high heat for about 5 minutes per side for medium. If broiling, allow 6-7 minutes per side.

Meanwhile, bring the marinade to a boil, and continue to boil for 3 minutes. Brush the chops with the marinade just before removing from the grill or broiler, and transfer to warm serving plates. Drizzle with remaining glaze.
