Ingredients

    1/2 stick unsalted butter
    2 TB olive oil
    4 cups slices onions
    3 - 14 oz cans fat free beef broth
    1 tsp thyme
    1 TB sherry
    4 slices french bread
    4 slices low fat provolone cheese

Directions

Cook onions in butter and olive oil until translucent in stock pot. Do not brown onions. Add broth, thyme and sherry and let simmer for 30 minutes. Put into crocks, add bread slices then top with cheese slice and put under broiler for a minute until cheese is bubbly and brown!
