    2 tbsp olive oil
    2 tbsp unsweetened applesauce
    1 egg
    1/2 cup Greek yogurt
    1/2 teaspoon salt
    2 Tbsp. honey
    1/2 teaspoon baking soda
    1/4 cup cornmeal
    1/3 cup protein powder
    1/4 cup oat bran
    1/2 cup whole wheat flour


These turned out pretty good. I wouldn't make any changes, watch the baking time. Nutritional stats are great!


Measure the oil and applesauce into a large bowl. Crack in the egg and add the yogurt. Beat with a whisk until thoroughly combined. Add the salt, sugar, soda, cornmeal, protein powder and flour. Stir lightly. When mixed, but still lumpy stop stirring. Oil up the muffin cups. Divide the batter evenly amongst the muffin cups. Bake at 400 for about 15 minutes. Remove from the oven and cool slightly before eating.
