Ingredients

1 pound Roasting Chicken, dark meat, cut into strips or bite sized pieces
1whole onion, raw, chopped
4 oz Green Chili Peppers, canned
1 cup Yellow Sweet Corn, Frozen,
1/2 cup Beans, pinto, canned, rinsed
1/2 cup Kraft Minute Whole Grain Brown Rice
3 tsp Chicken Boullion Concentrate or chicken stock to make three cups (omit water if using stock)
1 tbsp Cumin ground
3 cloves Garlic, minced
1/2 tsp salt or to taste
1/2 tsp Pepper, black
1/2 tsp Pepper, red or cayenne
1.5 tsp Oregano, ground
1/2 tsp Rubbed Sage
3 cups Water, tap
Directions
Brown chicken in a med or large pot with seasonings. Add onion, green chilies and garlic. simmer till chicken is no longer pink. Add chicken bouillon, water (or chicken stock) and beans. Bring to a boil. Add rice, remove from heat, stir and cover until Rice is done.
