Ingredients

4 Cups Chicken Broth
1 Cups Mushrooms, chopped
1 1/2 Cups Shelled Edamame (frozen is fine)
1 Tbsp Extra Virgin Olive Oil
1 Small Onion, diced
2 cloves Garlic, minced
1 package Vigo Gnocchi
Salt & Pepper, to taste
Basil, to taste
Directions
In a soup pot over medium-high heat, add chicken broth, shelled edamame, and mushrooms.
Heat oil in a pan over medium-high heat and sautee onions, and garlic until onions are translucent - about 3-5 minutes. Add to soup pot.
Bring broth a rolling boil, and add in Gnocchi. Cook for 3-5 minutes until Gnocchi float.
Add salt, pepper and basil to taste.
Serving Size: Five 1-1/2C servings
