Ingredients

    3 leeks, sliced and soaked to remove grit
    3 Tbsp butter
    5 Tbsp flour
    4 1/2 cups milk
    salt
    pepper
    optional: grated mozzarella cheese (nutritional info does not include this)

Directions

Fry leeks in butter until browned and soft. Add flour and mix well. Gradually stir in milk and cook, stirring constantly, until thickened. Season with salt and pepper.

Serve hot with grated mozzarella cheese, if desired. Makes 4 servings.
